Portare a ebollizione l'acqua in una pentola capiente. Immergere le pesche intere per 90 secondi, quindi scolarle con un mestolo forato e raffreddarle sotto acqua corrente fredda per 2-3 minuti.

Sbucciare delicatamente le pesche, tagliarle a metà ed estrarre il nocciolo con un coltello da frutta. Sistemare le metà in una ciotola pulita.

In una pentola piccola versare acqua, miele, succo di limone, scorza e il pizzico di sale. Portare a ebollizione a fuoco medio.

Spezzettare la stecca di vaniglia (se utilizzata) e aggiungerla al liquido. Cuocere per 8-10 minuti a fuoco dolce, mescolando occasionalmente, finché il composto non diventa leggermente denso e profumato.

Versare lo sciroppo caldo sulle pesche in una ciotola di vetro o in vasetti sterili a tappo, assicurandosi che siano completamente immerse.
