Tritare finemente le mandorle intere in un mixer fino a ottenere una texture simile a sabbia grossolana, senza trasformarle in burro.

Trasferire le mandorle tritate in una ciotola e aggiungere le uova intere, l'eritritolo, l'estratto di vaniglia, il sale e la cannella.

Mescolare energicamente con un cucchiaio di legno o frusta fino a ottenere un impasto omogeneo e compatto.

Preriscaldare il forno a 190°C. Foderare una placca con carta forno.

In una ciotolina poco profonda, sbattere leggermente i 2 albumi con una forchetta.

Disporre le mandorle a lamelle su un piatto piano.

Con le mani umide, prelevare cucchiaiate di impasto (circa 15-18 g cad.) e formare palline compatte e regolari.

Immergere ogni pallina prima nell'albume sbattuto, poi farla rotolare sulle mandorle a lamelle fino a ricoprirla uniformemente.

Posizionare i petit four sulla placca preparata, distanziandoli di almeno 2 cm l'uno dall'altro.

Infornare a 190°C per 12 minuti, fino a quando i petit four assumono un colore dorato chiaro.

Estrarre dal forno e lasciar raffreddare completamente su una gratella prima di servire.
