Method

Preparare la pasta frolla: unire in una ciotola la farina integrale, l'amido di mais e un pizzico di sale. Aggiungere il burro freddo a tocchetti e sfregare con le dita fino a ottenere una briciola. Incorporare l'uovo e lo zucchero, impastare brevemente fino a formare un panetto compatto. Avvolgere nella pellicola e riposare in frigorifero per 45 minuti.

Preriscaldare il forno a 180°C. Stendere la pasta fra due fogli di carta forno fino a 3 mm di spessore. Ricavare 6 dischi con un coppapasta da 10 cm e sistemarli in stampini per tartellette imburrati. Bucherellare il fondo con una forchetta.

Coprire con carta forno e riempire con legumi secchi. Cuocere per 18 minuti fino a doratura leggera. Togliere dal forno, lasciar raffreddare su una gratella.

Preparare la crema curd: in una ciotola a bagnomaria, montare i tuorli con la stevia e la scorza di limone a fuoco dolce per 3-4 minuti. Aggiungere gradualmente il succo di limone, mescolando costantemente.

Quando la crema raggiunge 65°C, unire il burro a pezzetti e l'amido di tapioca, continuare a mescolare finché non ispessisce (circa 5 minuti). Togliere dal fuoco e lasciar intiepidire.

Incorporare delicatamente le proteine del siero mescolando con spatola fino a completo amalgama. Riempire le tartellette ancora tiepide con la crema curd.

Preparare la meringa: montare gli albumi con il cremor tartaro e il succo di limone a velocità media fino a spuma leggera. Aggiungere gradualmente lo zucchero e la maizena, continuare a montare fino a picchi morbidi (non secchi).

Trasferire la meringa in una tasca da pasticceria con bocchetta liscia. Formare ciuffetti sulle tartellette, coprendo completamente la crema.

Con un cannello culinario, caramellare leggermente le punte della meringa per 2-3 secondi per lato.

Riporre in frigorifero per almeno 1 ora prima di servire.
