Method

Inizia preparando l'impasto: in una ciotola, mescola 40g di farina di avena con 20g di farina di cocco e un pizzico di sale. Forma una fontanella e aggiungi 3 cucchiai di acqua tiepida e 1 cucchiaino di olio EVO. Impasta fino ad ottenere un composto omogeneo, poi lascia riposare coperto per 30 minuti.

Cuoci il cavolfiore: riduci 150g di cavolfiore in pezzi e lessalo in acqua salata per circa 10 minuti. Scola e schiaccia finemente con una forchetta.

Prepara il ripieno: unisci 80g di ricotta di bufala al cavolfiore schiacciato, aggiungi 2 cucchiai di cipolla rossa precedentemente stufata, sale e pepe. Mescola bene.

Stendi l'impasto tra due fogli di carta da forno, creando uno spessore di circa 2mm. Ritaglia dei cerchi di 7cm di diametro e riempi ciascuno con 1 cucchiaio di ripieno. Piegali a mezzaluna e sigilla bene i bordi.

Cuoci i pierogi in una padella antiaderente con 1 cucchiaino di olio EVO a fuoco medio per 4-5 minuti per lato, fino a doratura leggera.

Servi i pierogi caldi con un cucchiaio di yogurt greco e un tocco di prezzemolo fresco.
