Method

Preriscaldare il forno a 170°C. Foderare una tortiera rotonda (21 cm diametro) con carta forno.

Montare i 4 bianchi d'uovo con sale e cremor tartaro fino a picchi fermissimi (circa 4 minuti a velocità media-alta).

Aggiungere gradualmente lo zucchero di cocco e il colorante rosa, continuando a montare per altri 2 minuti fino a ottenere una meringata lucida e stabile.

Unire delicatamente la farina di mandorle, la farina integrale e l'estratto di vaniglia, mescolando dal basso verso l'alto con spatola per non smontare.

Versare l'impasto nella tortiera e livellare la superficie.

Infornare per 40-45 minuti a 170°C fino a quando uno stecchino inserito al centro esce pulito. La torta avrà una leggera spaccatura naturale sulla superficie.

Togliere dal forno e lasciare raffreddare completamente a temperatura ambiente.

Sciogliere la gelatina (o agar agar) in 60 ml di acqua fredda secondo le istruzioni del prodotto.
