In una ciotola, unisci l'albume d'uovo con lo yogurt greco e il lievito istantaneo, mescolando bene.

Aggiungi la farina di avena integrale, la farina di cocco, la scorza grattugiata di arancia e limone, e un pizzico di sale. Se desideri, puoi aggiungere anche un cucchiaio di miele per dolcificare.

Mescola il tutto fino a ottenere un impasto omogeneo.

Trasferisci l'impasto su un foglio di carta forno, forma una palla e schiacciala delicatamente con le mani fino a ottenere uno spessore di circa 2 cm.
