Inizia preparando il tzatziki: grattugia finemente il cetriolo e schiaccia gli spicchi d'aglio. Unisci il cetriolo e l'aglio in una ciotola e lascia riposare per 5 minuti per far drenare il liquido in eccesso.

Aggiungi lo yogurt greco, l'aceto, il sale e la menta tritata. Mescola bene e riponi in frigorifero per raffreddare.

In una ciotola, sbatti l'uovo intero e gli albumi fino a ottenere un composto omogeneo. Incorpora lentamente la farina di avena e l'olio d'oliva, aggiungendo un pizzico di sale.
