In una ciotola, mescola il riso di cavolfiore crudo con la farina di mandorle, l'uovo, il sale e l'olio. Impasta fino ad ottenere un composto omogeneo.

Stendi l'impasto su carta forno formando un disco di circa 20cm di diametro.

Cuoci la base in forno preriscaldato a 200°C per 15 minuti, fino a doratura.

Nel frattempo, affetta finemente il finocchio e mescolalo con le olive verdi e gli spicchi di arancia. Aggiungi un pizzico di sale e lascia insaporire.

Una volta pronta la base, farciscila con l'insalata di finocchi e olive, poi aggiungi le fette di bresaola arrotolate.
