Method

Cuocere il cavolfiore a vapore fino a renderlo tenero, poi frullarlo fino a ottenere una consistenza fine.

In una ciotola, unire il cavolfiore frullato, le uova, il formaggio grattugiato, il lievito e un pizzico di sale, mescolando bene fino a ottenere un impasto omogeneo.

Stendere l'impasto su una teglia rivestita di carta forno, formando un cerchio di circa 25 cm.

Infornare la base di cavolfiore in forno preriscaldato a 200°C per 15 minuti, fino a doratura.

Estrarre la base dal forno e distribuire la mozzarella light sopra, poi aggiungere il prosciutto crudo e le zucchine affettate.

Cospargere con rosmarino fresco e pepe a piacere, quindi infornare nuovamente per altri 10 minuti.
