Sciogliere il lievito madre in 60 ml di acqua tiepida per 5 minuti, quindi aggiungervi la restante acqua.

In una ciotola, unire la farina integrale e il sale. Creare una fontana al centro e versarvi il composto di acqua e lievito, mescolando gradualmente.

Aggiungere l'olio extravergine di oliva e impastare energicamente per 8-10 minuti fino a ottenere un impasto liscio e elastico.

Coprire la ciotola con un telo umido e far lievitare a temperatura ambiente per 90 minuti, fino al raddoppio del volume.

Nel frattempo, sbucciare e affettare sottilmente le mele. Trasferirle in una padella antiaderente a fuoco medio-basso con 1 g di cannella e un goccio di acqua; cuocere per 5 minuti fino a leggerissima caramellatura, poi raffreddare.

Preriscaldare il forno a 200°C e foderare una teglia rotonda da 28 cm con carta forno.

Sgonfiare delicatamente l'impasto e trasferirlo sulla teglia, allarganfold manualmente fino ai bordi, creando un orlo leggermente spesso.

Spennellare la base con mezzo cucchiaio d'olio, distribuire uniformemente la ricotta affumicata sbriciolata e cospargere con la mozzarella fior di latte grattugiata grossolanamente.

Cuocere in forno per 18 minuti a 200°C fino a doratura dei bordi.

Estrarre la pizza dal forno, disporvi le fettine di mela caramellata in modo ordinato, cospargere con grana padano, il rimanente pepe bianco e un pizzico di timo secco.

Infornare per altri 5 minuti fino a completa doratura della superficie.

Lasciar riposare 3-4 minuti prima di servire.
