Method

Scaldare l'acqua a circa 37°C, aggiungere il lievito di birra e lo zucchero, mescolare e far riposare 5 minuti fino a ottenere una schiuma in superficie.

In una ciotola capiente, versare la farina integrale e creare una fontana al centro; aggiungere il composto di acqua e lievito, l'olio e il sale.

Impastare per circa 10 minuti fino a ottenere un impasto liscio ed elastico, senza grumi.

Porre l'impasto in una ciotola leggermente unta, coprire con un canovaccio umido e lasciare lievitare 50-60 minuti finché raddoppia di volume.

Nel frattempo, tritare finemente gli spicchi di aglio e i filetti di acciughe, unire a 4ml di olio extravergine e mescolare.

In un'altra ciotola, schiacciare leggermente i pomodori pelati con una forchetta, aggiungere origano, pepe e sale; far ridurre a fuoco medio per 5 minuti.

Preriscaldare il forno a 220°C e rivestire una placca con carta da forno.

Trasferire l'impasto su un piano leggermente infarinato, formare un rotolo del diametro di circa 4-5 cm.

Tagliare il rotolo in fette di 1 cm di spessore; con le dita, assottigliare ogni fetta formando dischi piatti di circa 8cm di diametro.

Disporre i dischi sulla placca preparata, distribuire su ognuno 1 cucchiaino di salsa di pomodoro e 3-4 gocce di composto aglio-acciughe.

Cuocere in forno a 220°C per 12-15 minuti fino a doratura leggera e croccantezza dei bordi.

Estrarre dal forno, far raffreddare per 2-3 minuti e servire calde.
