Iniziate a lessare le patate in una pentola con acqua salata fino a quando non saranno tenere, circa 20 minuti. Scolatele e schiacciatele in una ciotola grande.

Aggiungete alla purea di patate la farina integrale, i tuorli d'uovo, un pizzico di sale, l'olio d'oliva e la stevia. Impastate fino ad ottenere un composto omogeneo e morbido.

Stendete l'impasto su una superficie infarinata, fino a raggiungere uno spessore di circa 1 cm. Con un coppapasta, ricavate dei dischi di circa 10 cm di diametro.

Al centro di ogni disco, posizionate una prugna snocciolata, spolveratela con un pizzico di cannella e quindi richiudete i dischi di impasto formando delle palline. Sigillate bene i bordi per evitare che il ripieno fuoriesca durante la cottura.

Portate a ebollizione una pentola capiente di acqua salata e cuocete i canederli per circa 10-12 minuti, finché non risaliranno in superficie.

Nel frattempo, preparate la salsa mescolando lo yogurt greco con un po' di stevia e cannella a piacere. Se volete, potete aggiungere un po' di succo di prugna per un sapore più intenso.

Scolate i canederli e serviteli caldi, guarniti con la salsa di yogurt greco e una spolverata di cannella.
