Preriscaldare il forno a 180°C. Rivestire uno stampo rettangolare (25x10 cm) di carta da forno.

Pelare lo spicchio d'aglio e tritarlo finemente con un coltello. In una padella antiaderente, scaldare a fuoco basso l'aglio con 5 ml di olio per 1 minuto, poi aggiungere la pancetta a dadini. Rosolare per 4-5 minuti finché diventa croccante, quindi togliere dal fuoco e far raffreddare.

Tritare il pecorinetto in piccoli pezzi con un coltello e i datteri grossolanamente; tenere da parte.

In una ciotola, sbattere leggermente le uova con una forchetta. Aggiungere il latte scremato e i restanti 25 ml di olio, mescolando bene.

In un'altra ciotola, unire la farina di mandorle, la farina di riso, il lievito, il sale e il pepe, mescolando con un cucchiaio di legno.

Versare il composto liquido sui secchi e mescolare delicatamente finché non rimangono macchie di farina. Aggiungere la pancetta raffreddata, il pecorinetto e i datteri, incorporando con pochi giri di spatola.

Trasferire l'impasto nello stampo e livellare leggermente la superficie.

Cuocere in forno a 180°C per 30-35 minuti, finché uno stecchino inserito nel centro esce pulito o con poche briciole umide.

Togliere dal forno e lasciar riposare 10 minuti prima di estrarre dallo stampo. Servire tiepido o a temperatura ambiente, tagliato a fette.
