Arrostire i peperoni poblano su una griglia o in forno a 200°C fino a quando la pelle non è bruciacchiata, circa 10 minuti.

Trasferire i peperoni in un sacchetto di plastica e lasciarli riposare per 10 minuti. Rimuovere la pelle e i semi, quindi tritarli finemente.
