In una ciotola, unisci il tacchino macinato, il pollo macinato, l'uovo, il pangrattato integrale, il parmigiano e metà del prezzemolo tritato. Impasta leggermente fino a ottenere un composto omogeneo e forma 12-14 polpettine compatte.

In un tegame, scalda l'olio a fuoco medio e aggiungi gli spicchi d'aglio schiacciati e il peperoncino. Lascia insaporire per 2-3 minuti finché non diventano fragranti.

Deposita delicatamente le polpettine nel tegame e fai rosolare da tutti i lati per 4-5 minuti, muovendole con cautela per non romperle.

Versa il vino bianco e lascia sfumare a fuoco vivo per 3 minuti, girando ogni tanto.

Aggiungi la polpa di pomodoro e l'acqua, regola di sale e pepe. Abbassa il fuoco a medio-basso e lascia cuocere coperto per 15-18 minuti, fino a quando le polpettine sono completamente cotte e il sugo si è leggermente concentrato.

Togli l'aglio se preferisci, aggiungi i capperi e il prezzemolo fresco rimasto, mescola delicatamente e assaggia per regolare di sale e pepe.
