Method

Lavare le patate e cuocerle in acqua salata per 20-25 minuti fino a quando risulteranno tenere al centro. Scolarle bene e lasciarle raffreddare leggermente.

Una volta tiepide, pelare le patate e trasferirle in una ciotola. Schiacciarle grossolanamente con una forchetta.

Aggiungere la ricotta magra, il parmigiano, la farina di riso, paprika, aglio in polvere, sale, pepe e le erbe aromatiche fresche. Mescolare bene fino a ottenere un composto omogeneo e non appiccicaticcio.

Coprire e riporre in frigorifero per 30 minuti per facilitare la modellazione.

Preriscaldare il forno a 180°C. Rivestire una placca con carta forno e spennellare leggermente con olio extravergine di oliva.

Prelevare piccole quantità di impasto (circa 15-20 g ciascuna) e formare palline compatte delle dimensioni di una noce. Disporle sulla placca mantenendo una distanza di 1-2 cm tra una e l'altra.

Cuocere in forno a 180°C per 40-45 minuti fino a quando i pop corn risulteranno dorati e leggermente croccanti in superficie.

Estrarre dal forno, lasciar riposare 2-3 minuti sulla placca, poi trasferire su un piatto. Servire caldi o a temperatura ambiente.
