In una ciotola, sciogliere il lievito di birra secco in 100 ml di latte tiepido e lasciare riposare per circa 10 minuti.

In una ciotola grande, sbattere le uova con il miele fino a ottenere un composto chiaro e spumoso.

Aggiungere la farina integrale, le proteine in polvere, il sale e la cannella al composto di uova e miele.

Incorporare il lievito sciolto e mescolare fino a ottenere un impasto omogeneo.

Aggiungere il burro di mandorle e impastare per circa 10 minuti fino a ottenere un impasto elastico.

Coprire con un canovaccio e lasciare lievitare in un luogo caldo per circa 1 ora.

Preriscaldare il forno a 180°C.
