Trita finemente il peperone chipotle e uniscilo a 60ml di acqua; frulla bene fino a ottenere una purea liscia.

In una padella antiaderente a fuoco medio, rosola il pollo (125g) e il maiale (125g) tagliati a cubetti per 5 minuti.

Aggiungi la cipolla tritata e l'aglio, cuoci per 2 minuti, poi versa la purea di chipotle, i peperoni verdi in scatola (60g sgocciolati) e il brodo di pollo (250ml).

Aggiungi oregano, cumin, pepe nero e il pezzo di alloro; porta a ebollizione.

Inserisci il cavolfiore tagliato a piccoli pezzi (150g) e riduci a fuoco basso, coperto, per 12-15 minuti fino a cottura completa.
