Cuocere il petto di pollo a cubetti in 300ml di brodo vegetale con uno spicchio d'aglio intero e un pizzico di sale a fuoco medio per 30 minuti, fino a quando il pollo è tenero.

Nel frattempo, ammollare i peperoncini guajillo in acqua bollente per 10 minuti, poi frullarli con il pomodoro pelato, l'aglio, la curcuma, l'origano e il cumino in 100ml di acqua; passare al setaccio fine.

Unire il composto di peperoncini al brodo di pollo e lasciar sobbollire per 5 minuti per amalgamare i sapori.
