Method

Inizia scaldando 50 ml di acqua tiepida (circa 37°C) e sciogli il lievito di birra secco, lasciando riposare per 5 minuti.

In una ciotola, mescola la farina di avena, le proteine in polvere, i semi di lino macinati, la gomma di xantano e un pizzico di sale.

Aggiungi il composto di lievito alla miscela di farine e mescola fino a ottenere un impasto omogeneo, aggiungendo acqua se necessario.

Impasta a mano per circa 3 minuti fino a compattare bene.

Trasferisci l'impasto in un contenitore ermetico, copri con pellicola e lascia lievitare a temperatura ambiente per 30 minuti, poi in frigorifero per un'ora.

Preriscalda il forno a 180°C e cuoci il pane per 25 minuti, fino a doratura.
