Sciogliere il lievito secco in 50 ml di acqua tiepida (circa 37°C) per 5 minuti, fino a formare una sospensione omogenea.

In una terrina, versare la farina integrale, aggiungere la proteina in polvere e il sale; mescolare bene con una forchetta.
