Lava e taglia finemente i peperoni, le zucchine, la cipolla e i funghi.

Scalda l'olio EVO in una padella antiaderente a fuoco medio-alto e aggiungi le verdure. Rosola per circa 5-6 minuti, mescolando, fino a quando non sono tenere ma ancora croccanti. Aggiusta di sale e pepe.

Rimuovi le verdure dalla padella e mettile da parte.

Nella stessa padella, posiziona la tortilla proteica e distribuisci uniformemente 30g di formaggio magro. Aggiungi le verdure rosolate e copri con il restante formaggio.

Copri con un'altra tortilla e cuoci per 2-3 minuti per lato, fino a doratura e con il formaggio fuso.

Trasferisci la quesadilla su un piatto, tagliala in quattro e servila calda con un cucchiaio di salsa di pomodoro.
