Scola i carciofi surgelati se congelati, oppure pulisci quelli freschi. Trita finemente la cipolla.

In una padella antiaderente con un poco d'olio, fai rosolare la cipolla tritata a fuoco medio per 3 minuti fino a che risulti trasparente.

Aggiungi i carciofi, il vino bianco, sale e pepe. Cuoci per 8 minuti a fuoco medio-basso, finché i carciofi sono teneri e il vino è ridotto.

Preriscalda il forno a 180°C. Nel frattempo, disponi i fogli di pasta fillo in una tortiera (diametro 26 cm), sovrapponendoli leggermente e oleandoli a ogni strato per ottenere una base croccante.

In una ciotola, sbatti insieme ricotta magra, uova, latte scremato, Parmigiano reggiano grattugiato, mostarda di Dijon, sale, pepe e una spolverata di noce moscata, finché il composto è omogeneo.

Distribuisci il composto di carciofi sulla base di pasta fillo, poi versa delicatamente il composto di ricotta e uova sopra.

Cuoci in forno per 30-35 minuti, finché la superficie è dorata e il ripieno è ben sodo al centro.

Lascia raffreddare per 5 minuti, taglia in 6 fette e servi tiepida.
