Portare a ebollizione una pentola d'acqua e calare le uova per 6 minuti (alla coque morbida). Trasferirle in acqua fredda, sgusciarle con delicatezza e tenere da parte.

In un'altra pentola, scaldare leggermente l'olio di sesamo e rosolare l'aglio tritato per 30 secondi fino a profumarlo.

Aggiungere i funghi shiitake affettati e la carota a julienne, saltare per 2 minuti a fuoco medio-alto.

Versare il brodo e l'acqua, portare a ebollizione e aggiungere la pasta di gochujang diluita in un cucchiaio di brodo freddo. Mescolare bene.

Unire il kimchi tritato, il peperoncino secco e un pizzico di sale. Assaggiare e regolare il sapore con la salsa di soia. Lasciare sobbollire per 8 minuti.

Nel frattempo, cuocere i noodles integrali in acqua salata secondo le indicazioni della confezione (solitamente 4-5 minuti). Scolarli bene.

Dividere i noodles tra due ciotole. Versare il brodo caldo sopra, distribuire le fette di tofu affumicato, il cipollotto affettato e posizionare mezza uova alla coque in ciascuna ciotola.

Spargere i semi di sesamo tostati, la polvere di nori ridotta in pezzi sottili, e un filo d'olio di sesamo. Servire immediato.
