In una casseruola, scalda l'olio extravergine di oliva e fai rosolare la cipolla tritata per 2 minuti a fuoco medio.

Aggiungi il riso integrale e tostalo per un paio di minuti, mescolando bene.

Versare il brodo vegetale e portare a ebollizione, poi abbassare la fiamma e cuocere per circa 10-12 minuti, finché il riso non è al dente.

Nel frattempo, cuoci il salmone in una padella antiaderente per circa 5 minuti, girandolo a metà cottura.

Unisci i piselli al riso negli ultimi 3 minuti di cottura.

Quando il riso è pronto, aggiungi il salmone sminuzzato, la menta tritata e il succo di limone.

Mescola bene e servi caldo, guarnendo con qualche foglia di menta fresca.
