La Cacio e Pepe è il cuore battente della cucina romana: tre soli ingredienti, pecorino romano, pepe nero e pasta, che nascondono la sfida di una crema liscia e avvolgente. Il segreto sta tutto nell'acqua di cottura ben amidosa e in un pecorino grattugiato finissimo, mantecato lontano dal fuoco perché non impazzisca in grumi.

Questa è la versione autentica, quella che si mangia nelle trattorie di Trastevere con i tonnarelli che trattengono la salsa. È un piatto povero solo negli ingredienti, ma ricchissimo di gusto e di tecnica: perfetta per una cena vera, quando hai voglia di sederti a tavola e di sentire il pepe che pizzica e il formaggio che avvolge. Pesta i grani di pepe nero al mortaio o schiacciali con il fondo di un pentolino, lasciandoli grossolani per liberare tutto l'aroma senza polverizzarli.

Tosta il pepe pestato in una padella larga a fuoco basso per un minuto, finché non sprigiona il suo profumo pungente: questo passaggio fa la differenza.

Porta a bollore poca acqua leggermente salata e cala i tonnarelli, ricordando che il pecorino aggiungerà già molta sapidità.

Mentre la pasta cuoce, versa un mestolo di acqua di cottura sul pepe tostato in padella e crea un fondo caldo dove far saltare la pasta.

In una ciotola a parte lavora il pecorino grattugiato con qualche cucchiaio di acqua di cottura tiepida (non bollente), mescolando fino a ottenere una cremina densa e senza grumi.

Scola i tonnarelli molto al dente e trasferiscili nella padella con il pepe, saltandoli con un po' di acqua amidosa per un minuto.

Spegni il fuoco, attendi trenta secondi e aggiungi la crema di pecorino mantecando con energia, aggiustando con acqua di cottura fino a una salsa lucida e avvolgente.

Impiatta subito con una spolverata di pecorino e una macinata di pepe fresco, servendo la Cacio e Pepe caldissima prima che stringa.
