In una ciotola, mescolare lo yogurt greco, il lievito di birra e l'eritritolo fino a ottenere un composto omogeneo. Aggiungere le farine e il pizzico di sale, quindi impastare a mano fino a ottenere un impasto liscio.

Incorporare l'uovo e il burro di mandorle, continuando a lavorare l'impasto fino a che non diventa elastico. Coprire con un canovaccio e far lievitare in un luogo caldo per 30 minuti.
