In un pentolino, mescolare l'acqua, l'aceto di riso, l'eritritolo e il succo di limone. Scaldare a fuoco basso per circa 3 minuti, mescolando fino a dissolvere l'eritritolo. Versare in una ciotola e lasciare raffreddare.

Cuocere il filetto di salmone a vapore per 12 minuti, fino a quando è tenero.

Nel frattempo, tagliare a julienne il cetriolo, le carote, lo zenzero, il peperoncino e la cipolla.

Quando il salmone è cotto, immergerlo nella salsa insieme alle verdure e lasciare marinare in frigorifero per 20 minuti.
