Method

Preparare la marinata: in una ciotola unire il mirin, l'aceto di riso, la salsa di soia e l'aglio tritato, mescolare bene fino a ottenere un composto omogeneo.

Aggiungere lo zenzero grattugiato alla marinata e far riposare per 5 minuti affinché i sapori si amalgamino.

Sistemare il salmone in un piatto fondo, versare la marinata sopra il filetto e far marinare in frigorifero per 25 minuti.

Nel frattempo, portare a ebollizione l'acqua in un pentolone, versare il riso integrale, salare leggermente e cuocere a fiamma medio-bassa per 30 minuti, finché il riso non avrà assorbito completamente l'acqua.

Preriscaldare il forno a 180°C. Prelevare il salmone dalla marinata conservando il liquido in una ciotola separata.

Disporre il salmone su una teglia rivestita di carta forno, attorno sistemare i pomodorini tagliati a metà e le fette di limone sottili.

Infornare il salmone per 18-20 minuti, fino a quando la parte più spessa raggiunge i 63°C al termometro da cucina.

A 5 minuti dalla fine della cottura del salmone, versare gli edamame in un cestello per la cottura a vapore sopra una pentola con acqua bollente, cuocere per 4 minuti e scolare.

Dividere il riso integrale caldo in 4 ciotole, adagiare sopra il salmone, alcuni edamame e i pomodorini.

Guarnire con il cipollotto affettato sottile, il coriandolo fresco, i semi di sesamo e concludere con un filo di olio di sesamo tostato e un cucchiaio della marinata ridotta.
