Sciacquare bene le amarene, eliminare i noccioli delicatamente con uno spurgia e verserle in una ciotola di vetro con la stevia.

Aggiungere il succo e la scorza grattugiata di limone, mescolare delicatamente con un cucchiaio di legno e coprire con carta d'alluminio.

Riporre in frigorifero e lasciare macerare per 18 ore, affinché le amarene rilascino i loro succhi naturali.

Versare il composto macerat (amarene e succo) in un tegame a fondo spesso, aggiungere l'acqua e la stecca di cannella.

Portare a ebollizione a fuoco medio e cuocere per 10 minuti, mescolando occasionalmente.

In una ciotola piccola, diluire la pectina con 30 ml di acqua fredda, mescolare bene sino a ottenere una pasta liscia senza grumi.

Versare la miscela di pectina nel tegame e continuare a cuocere per altri 8-10 minuti, mescolando costantemente, fino a raggiungere la consistenza desiderata.

Togliere dal fuoco, aggiungere il collagene idrolizzato e il pizzico di sale, mescolare energicamente per 2 minuti fino a completa dissoluzione.

Versare la compota ancora calda in 2-3 vasetti di vetro sterilizzati, coprire e far raffreddare a temperatura ambiente.

Una volta fredda, conservare in frigorifero per max 15 giorni, oppure surgelare in porzioni monouso per 3 mesi.
