Method

In un pentolino a fuoco medio, versare l'acqua filtrata e lo sciroppo di agave. Mescolare delicatamente fino a che lo sciroppo si scioglie completamente, circa 2 minuti.

Aggiungere il pizzico di sale marino e portare quasi a ebollizione (non deve bollire violentemente).

Ridurre il fuoco a basso e togliere il pentolino dal fuoco. Aggiungere l'estratto di vaniglia pura e mescolare.

Setacciare il cacao in polvere direttamente nel pentolino per evitare grumi. Mescolare vigorosamente con una frusta per 1-2 minuti fino a completa uniformità.

Aggiungere la proteine in polvere e la gomma di xantano, mescolare ancora per 30 secondi per ottenere una consistenza vellutata e omogenea.

Lasciare raffreddare per 5 minuti a temperatura ambiente, mescolando occasionalmente. Lo sciroppo si addenserà leggermente.

Versare in un barattolo di vetro pulito e conservare in frigorifero per massimo 10 giorni. Prima dell'uso, scaldare brevemente e mescolare.
