Method

Sciacqua i mirtilli e mettili in un bicchiere alto. Aggiungi il succo di limone fresco e schiaccia leggermente i frutti con uno schiacchiapatate per far fuoriuscire i loro succhi naturali. Lascia riposare per 2 ore a temperatura ambiente.

Versa il composto di mirtilli in un colino a maglia fine posizionato sopra una ciotola. Filtra delicatamente senza pressare, raccogliendo solo il nettare che cade naturalmente. Scarta la polpa.

Trasferisci il nettare filtrato in un pentolino piccolo. Aggiungi l'anice stellato e l'acqua.

Porta a ebollizione lenta, quindi riduci il fuoco al minimo e lascia sobbollire per 6-7 minuti, permettendo ai profumi dell'anice di infondersi.

Togli dal fuoco e lascia raffreddare per 5 minuti. Rimuovi l'anice stellato con una pinzetta.

Quando lo sciroppo è tiepido, aggiungi la stevia e le proteine in polvere. Mescola energicamente con un frullino manuale per 1 minuto, assicurandoti che la polvere si dissolva completamente senza grumi.

Versa lo sciroppo in un vasetto di vetro sterilizzato con tappo a vite. Lascia raffreddare completamente a temperatura ambiente, poi riponi in frigorifero per almeno 12 ore prima di usare.
