Preriscalda il forno a 200°C. Fodera una teglia con carta forno.

In una ciotola, mescola la farina di avena, le proteine in polvere, il lievito, la cannella, la vaniglia in polvere e il sale.

In un'altra ciotola, sbatti l'uovo con la purea di zucca e lo yogurt greco fino a ottenere un composto omogeneo.

Aggiungi gli ingredienti liquidi a quelli secchi e mescola delicatamente fino a ottenere un impasto omogeneo, senza lavorarlo troppo.

Trasferisci l'impasto sulla carta forno e forma un disco di circa 12 cm. Dividi in 4 spicchi con un coltello.
