Montare l'albume d'uovo con l'eritritolo e un pizzico di vaniglia fino a ottenere una neve ferma. Incorporare delicatamente la farina di mandorle.

Cuocere il composto in forno a 180°C su carta forno per 10 minuti fino a che non sia dorato.
