Preriscalda il forno a 200°C. Tostathe il pane integrale in una padella antiaderente fino a doratura uniforme, poi trita finemente con un coltello o grattugia per ottenere il pangrattato.

In una ciotola mescola il pangrattato con la scorza di limone grattugiata, il prezzemolo tritato, uno spicchio di aglio schiacciato e 8 ml di olio extravergine. Lascia riposare 5 minuti.

Disponi i filetti di sogliola su una teglia rivestita di carta forno. Spennella leggermente con i rimanenti 4 ml di olio, condisci con sale e pepe.

Distribuisci il pangrattato aromatizzato uniformemente sulla superficie dei filetti e inforna per 15-18 minuti, finché il pesce si sfoglia facilmente.

Mentre la sogliola cuoce, taglia le mele a fettine sottili dopo aver rimosso il torsolo. Riscalda una padella antiaderente a fuoco medio, aggiungere le mele, l'aceto di mele e l'acqua. Cuoci per 5 minuti circa, mescolando delicatamente, finché le mele diventano leggermente dorate e tenere.

Trasferisci la sogliola su un piatto da portata, disporvi accanto le mele caramellate e servi subito, guarnendo con un pizzico di scorza di limone fresco e uno o due fili di prezzemolo.
