Preriscaldare il forno a 200°C e foderare 4 cocotte individuali con carta da forno o imburrare leggermente con spray di olio.

Tritare finemente il cioccolato fondente e scioglierlo a bagnomaria con il burro di arachidi, mescolando fino a ottenere una crema liscia e omogenea.

In una ciotola separata, montare gli albumi con un pizzico di sale fino a ottenere picchi morbidi e consistenti.

Versare il cioccolato sciolto in una terrina, aggiungere il miele, la proteina whey e l'essenza di vaniglia, amalgamando bene.

Incorporare delicatamente la farina di mandorle al composto di cioccolato mescolando con movimenti decisi dal basso verso l'alto.

Aggiungere gli albumi montati in due tempi, piegando con una spatola per mantenere l'aria nella preparazione.
