Preriscalda il forno a 180°C e prepara 4 stampini monoporzione, ungendo leggermente con un po' d'olio d'oliva.

In una ciotola, monta gli albumi a neve ferma e metti da parte.

In un pentolino, scalda il latte scremato con un pizzico di sale e pepe fino a quasi ebollizione.
