Method

In una ciotola grande, unire il petto di pollo e il petto di tacchino macinato. Aggiungere i semi di senape, la salsa di soia, la paprika affumicata, l'aglio in polvere, il pepe nero, il pepe di Cayenna, i semi di cumino e il peperoncino in polvere. Mescolare bene fino ad ottenere un composto omogeneo.

Coprire la ciotola con pellicola trasparente e lasciare riposare in frigorifero per almeno 2 ore, preferibilmente tutta la notte per intensificare i sapori.

Dopo il riposo, formare 15 cilindri di carne e avvolgerli in carta stagnola, creando dei pacchetti. Assicurarsi di fare alcuni fori nella stagnola per consentire la fuoriuscita del vapore.

Preriscaldare il forno a 90°C e posizionare i cilindri su una teglia forata per raccogliere eventuali succhi.

Cuocere in forno per 5-6 ore, poi spegnere il forno e lasciare i cilindri al suo interno per ulteriori 2 ore.

Una volta raffreddati, togliere i bastoncini dalla stagnola, affettarli e servire come snack o antipasto.
