Method

In una ciotola, stemperare il lievito di birra nell'acqua tiepida con un pizzico di zucchero e lasciare riposare 5 minuti fino a che risulti cremoso.

Aggiungere la farina di kamut integrale, la proteina in polvere, l'olio e il sale, quindi impastare vigorosamente per 8 minuti fino a ottenere un composto elastico e omogeneo.

Trasferire l'impasto in una ciotola leggermente unta, coprire con un canovaccio umido e lasciare lievitare in luogo tiepido per 90 minuti fino a che il volume raddoppi.

Preriscaldare il forno a 200°C e foderare una placca con carta forno.

Dividere l'impasto in 4 porzioni e modellarle in filoncini lunghi circa 22 cm. Disporre sulla placca.

Con le forbici, praticare tagli obliqui distanziati di 3 cm sulla superficie, allargandoli leggermente per creare l'effetto spiga caratteristico.

Spennellare con acqua e cospargi uniformemente con sesamo e semi di lino.

Lasciare una seconda lievitazione di 45 minuti.

Infornare a 200°C per 22-25 minuti fino a doratura profonda e croccantezza.
