Grattugiare la scorza di 1 limone e spremere il succo di 2 limoni, setacciando i semi.
Tritare finemente il prezzemolo fresco.
Preparare il branzino: verificare che i filetti siano privi di lische, tamponarli con carta assorbente e condirli leggermente con sale, pepe e un filo d'olio.
Per la coulis: frullare la scorza grattugiata con 50 ml di acqua fredda e un pizzico di sale fino a ottenere un composto omogeneo, quindi passare al setaccio fine.
Per l'emulsione: in una ciotola a bagnomaria (50-60°C), montare il tuorlo con l'aceto e un pizzico di sale fino a ottenere una crema densa. Aggiungere lentamente 8 ml di olio extravergine per porzione, mescolando costantemente. Incorporare il prezzemolo tritato e parte del succo di limone (10 ml per porzione).
Disporre i filetti di branzino in cestelli per vapore o su un piatto microforato, coprendoli completamente con le fette di zucchina leggermente sovrapposte. Irrorare con un filo d'olio.
Cuocere a vapore per 18-22 minuti (il pesce deve essere opaco e facilmente sfaldabile con una forchetta).
Estrarre con cura i filetti e trasferirli su piatti tiepidi.
Completare con una piccola porzione di emulsione al limone e un filo della coulis verde attorno al piatto.
