Method

In una ciotola, unisci il petto di pollo macinato, la ricotta light, la farina di mandorle e l'uovo, mescolando fino ad ottenere un composto omogeneo.

In una padella antiaderente, scalda un cucchiaio di olio d'oliva e rosola la cipolla rossa tritata finché diventa trasparente.

Aggiungi le melanzane a cubetti e cuoci per circa 5 minuti.

Incorpora le zucchine, gli spinaci e i pomodorini, aggiustando di sale, pepe, origano e prezzemolo. Cuoci per altri 8 minuti finché le verdure sono tenere.

Stendi l'impasto su un foglio di carta forno, distribuisci il ripieno di verdure al centro e arrotola delicatamente.
