Sciacqua bene gli acini di uva fragola sotto acqua fredda e asciugali delicatamente con un canovaccio pulito.

Metti gli acini in un pentolino e cuoci a fuoco medio per 8-10 minuti, schiacciando dolcemente con un cucchiaio di legno per rompere la buccia e far fuoriuscire il succo.

Aggiungi il miele e continua a mescolare fino a ottenere una consistenza cremosa e setosa (circa 3-4 minuti).

Spegni il fuoco, attendi 2 minuti affinché il composto intiepidisca leggermente, poi aggiungi le proteine in polvere e il sale, mescolando bene fino a incorporare completamente.

Versa nei bicchierini o coppette da dessert e lascia raffreddare completamente a temperatura ambiente.

Conserva in frigorifero per almeno 2 ore prima di servire. Se desideri una consistenza più densa, puoi lasciarlo coperto in frigorifero per la notte.
