Method

Porta a ebollizione 600 ml di acqua in una pentola capiente, aggiungi il riso integrale e un pizzico di sale. Copri e cuoci a fuoco lento per circa 20-25 minuti, finché il riso non è tenero e l'acqua è assorbita.

In una ciotola, sbatti insieme il latte di mandorla, l'eritritolo, l'uovo, l'amido di mais e l'estratto di vaniglia fino a ottenere un composto omogeneo.

Versa il composto di latte sul riso cotto nella pentola e mescola bene. Porta a ebollizione e cuoci a fuoco basso per circa 10-15 minuti, mescolando di tanto in tanto.

Aggiungi l'uvetta e la cannella, mescolando fino a quando il tutto è ben amalgamato. Cuoci per ulteriori 5 minuti.
