In una padella, scaldare l'olio EVO e rosolare il petto di pollo macinato insieme al chorizo magro per 4-5 minuti fino a doratura.

Aggiungere la cipolla e il peperone rosso tritati, insieme all'aglio, mescolando per 3 minuti; sfumare con il vino bianco e far evaporare.

Versare il brodo vegetale, la passata di pomodoro, le olive, il cumino e l'origano; cuocere a fuoco lento per 10 minuti fino a riduzione.

Frullare la polpa di mais con un po' di brodo ridotto e incorporare al soffritto.
