Scaldare in un pentolino 60ml di acqua con 3g di olio di oliva e 1g di sale a 100°C per 3 minuti.

Mescolare 35g di farina di mandorle e la scorza grattugiata di mezzo mandarino, lasciare intiepidire 15 minuti.

Aggiungere 1 albume d'uovo all'impasto e mescolare bene fino a compattezza.

Formare cordoncini di 12cm di lunghezza e 0.5cm di diametro, chiudere accavallando le estremità.

Friggere in padella con 4g di olio a fuoco medio per 3-4 minuti per lato fino a doratura, scolare su carta assorbente. Servire con miele di acacia (1 cucchiaio) e granella di nocciole tostate.
