Method

In una ciotola tiepida, sciogliere il lievito di birra nel latte scremato caldo (non bollente) insieme al miele, mescolando delicatamente fino a completa dissoluzione.

Aggiungere la farina integrale, le proteine in polvere e il sale. Impastare energicamente con le mani per 8-10 minuti fino a ottenere un impasto elastico e coeso.

Incorporare l'olio di semi di girasole, continuando a lavorare l'impasto per altri 2 minuti finché non risulti liscio e omogeneo.

Trasferire l'impasto in una ciotola leggermente inumidita, coprire con un canovaccio umido e lasciare lievitare in luogo tiepido (25-27°C) per 90-120 minuti, finché il volume raddoppia.

Su un piano di lavoro leggermente infarinato, stendere l'impasto con le mani o un mattarello fino a raggiungere uno spessore di circa 0,6 cm.

Tagliare dischetti di circa 7 cm di diametro usando un coppapasta o un bicchiere e disporli su un vassoio infarinato.

Coprire nuovamente con il canovaccio e lasciare lievitare per altri 45-60 minuti finché risultino leggeri e gonfi al tatto.

Scaldare una padella antiaderente a fuoco medio. Cuocere le tigelle 3-4 minuti per lato, girandole frequentemente con una spatola, finché non acquistano una leggera doratura e risultano soffici all'interno.

Trasferire man mano le tigelle pronte in un cestino coperto con un canovaccio per mantenerle calde e fragranti. Servire immediatamente o lasciar raffreddare.
