Frulla il tofu serico con l'eritritolo e il rum in un frullatore fino a ottenere una crema liscia e omogenea (circa 1-2 minuti). Assicurati che la consistenza sia densa e vellutata.

Prepara il caffè espresso e lascialo raffreddare completamente a temperatura ambiente o in frigorifero.

Versa il caffè in una ciotola poco profonda. Immergi rapidamente (1-2 secondi per lato) i biscotti savoiardi nel caffè, senza farli inzuppare eccessivamente per mantenere la loro struttura.

Distribuisci sul fondo di 4 coppette o bicchierini da dolce 2 cucchiai di crema al tofu.

Disponi sopra la crema il primo strato di biscotti impregnati di caffè (2 biscotti per coppetta).

Copri con la metà della crema rimanente (circa 1 cucchiaio e mezzo per porzione).

Aggiungi un secondo strato di biscotti imbevuti di caffè sopra la crema.

Completa con il rimanente della crema al tofu, lisciando la superficie.

Copri le coppette con pellicola trasparente e riponi in frigorifero per almeno 3 ore (o overnight per un risultato migliore).

Poco prima di servire, togli la pellicola e cospargi la superficie con cacao amaro in polvere. Grattugia sottilmente il cioccolato fondente sopra come decorazione finale.
