Method

In una ciotola, mescola 180 ml di latte di soia con il succo di limone fresco e il nigari, lasciando riposare per 3 minuti fino a ottenere una consistenza densa.

Versa 800 ml di latte di soia in un pentolino a fondo spesso e riscalda a 80°C a fuoco medio, mescolando occasionalmente per 5-6 minuti.

Riduci il fuoco e versa lentamente il composto di coagulante direttamente nel latte caldo, mescolando dolcemente con movimenti circolari per 2-3 minuti.

Spegni il fuoco e copri il pentolino con un canovaccio pulito; lascia riposare per 10 minuti senza toccare.

Rivesti un colino o un cestello di drenaggio con una garza alimentare sterile e versavi delicatamente il coagulato, inclinando il pentolino.

Raccogli i bordi della garza e pressala leggermente per compattare il tofu; posiziona il colino su una ciotola per raccogliere il siero.

Refrigera il tofu in frigorifero per almeno 6-8 ore, facendo sgocciolare il liquido residuo.

Sforma il tofu capovolto su un piatto e rimuovi la garza con delicatezza.

Affetta il tofu a cubetti o in pezzi, conserva in acqua fredda in frigorifero fino a 5 giorni.
