Preriscalda il forno a 180°C e prepara uno stampo monoporzione rivestendolo con carta da forno.

In una ciotola, unisci la farina di avena, le proteine in polvere, il lievito, lo zenzero grattugiato, l'eritritolo e il sale.

In un'altra ciotola, sbatti l'uovo intero con lo yogurt greco e la scorza di limone fino a ottenere un composto omogeneo.

Aggiungi il latte di mandorla al composto di uovo e mescola bene.

Incorpora gli ingredienti secchi al composto umido, mescolando fino ad ottenere un impasto liscio.
