Method

Preriscaldare il forno a 175°C e rivestire una tortiera rotonda (diametro 24 cm) con carta forno.

In una ciotola capiente, montare leggermente le uova intere con una frusta manuale per 3-4 minuti fino a renderle schiumose e più chiare.

In un'altra ciotola, unire le mandorle macinate, lo zucchero integrale, la cannella, lo zenzero, la scorza di arancia e il sale. Mescolare bene.

Aggiungere alle uova montate il composto di mandorle e zuccheri, poi incorporare delicatamente con movimenti dal basso verso l'alto usando una spatola.

Aggiungere le carote grattugiate, il succo di limone e l'olio di cocco, continuando a mescolare con cura.

Setacciare la proteine in polvere e il lievito insieme, poi incorporarli al composto con movimenti avvolgenti per non smontare la struttura.

Versare il composto nella tortiera preparata, livellando la superficie.

Infornare a 175°C per 35-40 minuti, finché uno stecchino infilato al centro esce umido ma non bagnato.

Sfornare e lasciare raffreddare completamente sulla tortiera per 10 minuti, poi trasferire su un piatto.

Tagliare in 10 fette uguali e servire a temperatura ambiente.
